Have a friend who just installed a VC Madison.....we were wondering what normal operating temps should be? I could not find any threads talking about it or find any info in the manual. Thx for help
 
Mine burns okish at anything over 400 degrees on the griddle. It burns best around 600 degrees. Like any cast iron stove, try not to exceed 700.

Sometimes it just doesn't want to get to 400. In that case I crack the side door about 3/8" open for a few minutes. That usually gets things going.
