In several threads here the thermocouple is called the "proof of fire switch." Is that the full extent of its use in a pellet stove, to confirm that it's hot enough that there's a fire worth feeding more pellets to, and prevent overfilling a pot which has no flame? Or is it used beyond that in adjusting the feed or fans?

Depends upon the stove and where the t/c is mounted.

Your Quad uses it to determine that the fire has started. Your convection blower is turned on by a snap disk (aka low limit), your over fire, and burn back systems are also snap discs.

Harmans have one in the exhaust stream that sends temperature information to the controller that adjusts the feed and combustion air system depending on run mode it can use the room temperature probes information as well.
