Everything about our stove seems to function perfectly with the exception of a burnpot full of unburnt pellets once it's done shutting down. There's no issue while it's operating. Everything seems to be running properly other than this issue. Has anyone run into this before?

Sounds like you suffer from pellets sticking to the sides of the hopper (been there). Typically, the pellets in the middle will feed down but a fair amount will remain stuck to the sides. The stove "runs out" of pellets and the fire goes out. During the cool down cycle something happens causing the pellets to fall into the chute and then get fed into the stove. I just open my hopper occasionally and push the pellets back into the middle over the chute. There are other things to try, but I like being hands on, so it works for me.
