I bought PID temperature controller and placed the sensor right into the convection tube. Connected it to the wires for the snap switch. I can set it to any temperature I want. The only down side is that it has no swing setting in it and it cycles the fan on and off on shut down. But my fan comes on as soon as the tube gets hot, currently set at 45 degrees C. It was like $12 on eBay.
