If someone wants to hook a wall mount thermostat to an Accentra insert, what is the procedure. Do you need to order a special wire from Harman to adapt the thermostat to the insert?

I could be wrong, but I believe the Accentra insert comes with a short section of wire & the Thermistor that acts as a t-stat. It senses the temp in the room & the control board & ESP cause the unit to fire & burn as fast as it can to satisfy the t-stat. There is no "wall-Munt" unit like you'd see with a furnace/boiler.
 
You can install a Honeywell digital thermostat to the stove for a setback at night and a autostart in the morning. This will help you conserve the pellets. The probe that comes witht he Accentra doesn't automatically adjust the temps.
