Does anyone know if the drolet astral or the country hearth 2000 or 2500 have double air controls . Built in damper and fresh air control . Sorry not good with words . If not are there any ? Looking for a good safe stove . It would seem double controls would be standard on all stoves

The Austral has both a bypass damper that bypasses the smoke baffle for easier starts and it has an air control. This has nothing to do with safety. Safety comes from having a proper install and operation of the stove. FWIW our Jotul and the PE Alderlea have only one control and we don't miss having a bypass at all. With good draft there is no smoke spillage and with dry kindling and wood starting the fire is easy with no smoke spillage. This has made me a big fan of KISS stoves.
