Is decorative concrete an acceptable replacement for tile on the walls surrounding the stove and the hearth? What temps do you want material to withstand? I found a site that claims the material withstands 500 degrees.

Should be fine as long as the clearances to combustibles requirement are honored. That will mean to the studs in the wall behind the tile or granitecrete.
