I think I need to dry the cheese out more. Kinda like ricotta when baked.

That happened to my first batch as well. Try the hot water like i mentioned in this thread. Heat it in the water and stretch. Repeat. My second batch melted much better. Lookin good though.
I could just stand there and eat it all, especially when it's still hot. Hated to waste it on pizza.
