You can't over-cook the breast or it'll be too dry. If you handle the breast with care you will be rewarded.

Shoot the biggest bird and then brine that sucker for 24 hours... my neighbor did that last year and then believe it or not, grilled the entire bird. Best turkey I've ever eaten. No joke.
