We are in the process of replacing our old stove (in the image) with a new stove. We purchased a used Vermont Casting Defiant 1910 for $1000 that appears to be in great condition, but the manual says "Alcove Installation Not Permitted".

Is there any way to use the stove in this space (see picture) or should we look for a different stove.

We would have to know details about the construction of the alcove. If it's just single brick thick you probably can't do it unless the stove specifies alcove clearances that are met
 
Do you know the full construction details for this alcove? If the manual says not permitted, then that could be the final word unless there is proof that this "alcove" is built like a fireplace with double brick all around.
 
A bit of exploratory surgery with a masonry bit may determine what is behind the first layer of brick.
