Convection fan harsh starts following repair/bypass

I have a well-used St. Croix Prescott EXL that's making some noise right when the convection fan engages after the fire is lit.
Sounds like an electric buzz/click/harsh start right at the beginning, like a motor with a bad starting capacitor.
The convection fan is fairly new, replaced ~2 years ago.

The noise started after a repair/bypass I did when a power surge fried parts of the control board, and disabled the exhaust/vacuum fan relay, causing an "exhaust fan or vacuum sensor error" on the display (3 or 2 lights, can't remember).
I was able to bypass the issue by just connecting a plug to the exhaust fan wires and plugging it into an outlet before starting the stove, and unplugging it when the convection fan switched off after shut off & cool down.
Everything else on the board functions as normal.

What's extra interesting, is that sometimes during start-up, the control board might engage the convection fan for a bit (bypassing the thermo sensor which usually clicks it on), and I noticed that when that happens & the convection fan starts up, there is no buzz/harsh start noise.

What could be causing the harsh start buzz when the convection fan is engaged by the thermo sensor, but not when engaged by the control board during the initial start?
Should add: The buzz never happened before the surge & bypass, and started quietly, even when engaged by the thermo sensor.
