We ripped out our old metal fireplace insert this last spring. The fireplace was set in an wood framed alcove built on the side of the house. We will be replacing the fireplace with a freestanding woodstove. The plan is to have 1” fireproof insulation, then have 1” hardy board followed finally by ceramic tiles.
What are the specs/guidelines for distance from a fire-proof surface around a stove to the stove itself?

Yes they are set by each manufacturer specific to each stove
 
Alcoves need careful planning. Clearance measurements are based on the stove manual's requirements. The method suggested will not reduce clearances and may not be necessary. Again, follow the stove manual's guidance. If is says that clearances can be reduced using an NFPA 211 wall shield then a non-combustible surface with a 1" air space behind it is required that is open top and bottom by at least an inch.
