Ours cruises at 300-400° several feet up the pipe with a magnetic thermometer. Colder temps increase the draft and that makes more heat. We reload when the temp drops below 300°.

I feel like anything over 400° is just wasting heat up the pipe. Some stoves are better at recovering heat than others.
 
True that. To compare, it's necessary to define whether the temperature is surface on single-wall stove pipe or probe on double-wall stove pipe. 300-400º single wall temps are about 600-800º internal.

Internal pipe temps about 20” above the stove run 350-450 for low burn in moderate outside temps 30 and above. 450-550 burning a little hotter when outside temps are less than 30.
