Looking a little deeper, I think I want the 1-3/8". Still not sure of thickness. They have 1/2", 3/4", and 1".

1-3/8 is the OD of 1-1/4 copper. How hot will the manifolds get? Foam is a good choice above 180F continuous temperatures. Fiberglass will last forever if you keep it dry.
 
Thanks. I think you meant "not a good choice above 180F". Based on my oil boiler, it (I think polyethele) got a little melty right right at the boiler and I put some fiberglass there. I used some other foam, the black stuff as on A/C lines, I think polyurethane but not sure, near the boiler as an experiment and it didn't melt. I'm thinking 1" thick polyethelne would be the most cost effective.
