my current set up is a pleasant hearth 2200 wood stove in a corner with an offset through the wall flue pipe into a masonry chimney. I’d like to fill the void behind my wood stove with a false wall with a wall and mantel. What would be the best way to build it.

Lots of options, not sure what clearance specs are required, depends oa lot on your personal preference in terms of looks. Look on pinterest, lots of ideas on where to start. In my profile pic I attached 1x4 to the wall then attached backer board to it. Ceramic tile was then attached to the backer board. It was a messy install mortar and grout on a vertical wall is a mess.
 
The first thing to do is make sure your existing wall passthrough is correct. If it is going through a combustible wall you need 12" of solid masonry surrounding the crock or an insulated wall thimble. After that is right i would use steel studs and all noncombustible materials then you dont have to worry about it. But dont forget you still need to honor the clearances to the combustibles behind your new face
