Is there a formula for estimating the internal temperature of the stove box? Lets say your stove top is 500 degrees, the chimney is 800 degrees, what would you estimate the internal temperature?

Hot!!!

If you have secondary combustion going on you know it should be over 1000 degrees in there.

I forget where I heard it's about double surface temp.

Its a combination of a lot of things- You could get easily find the inner surface temperature of the metal, but finding that temperature of the gas in the firebox would be a bit tougher. The easiest way to find out would be to measure it as any heat transfer calculation would have some error included in it.
