Hello!

So my chimney is rated to 1000 degrees continuous

what is double wall stove pipe rated to?

my stovepipe/chimney heats up way faster than the stove and I routinely see 900-1000 degrees with my stovepipe probe thermometer before I can turn down the air with a strong fire burning. I have an SBI probe and its' directions say not to worry about these temps for short periods. I am usually hot for 5-10 minutes at a time. Occasionally stove top peaks near 750, but usually about 6-650.
