If the stove top is 550* and the pipe is 300* what would be the temp at the top of a chimney ? Any math formula to determine this ? Maybe has to take into consideration height of chimney and width?

I don't think there is any accurate calculation for this. It would depend on many other factors like mass of the chimney, flue size, interior or exterior, exposure, chase insulation (if applicable), multiple flues, etc.

just curious what the temp might be aT TOP OF CHIMNEY

I think Brother Bart took his IR gun up on the roof with him once but can't remember the temp he had.
