Englander 13NC, Measure temp?

I installed an Englander 13NC last year, and I was never sure where I should be monitoring the stove temp. I currently have a gauge on the top right, and it seems like it is off a bit from how the heat feels.

I really prefer measuring pipe temperature over stove top.
 
What would be a temp to look for on the pipe?
Well you run it up to 450 or so hold it there for 5 to 10 mins then shut back keep it above 250 till the fire starts to die down then repeat. That is for surface temps on single wall
