Generally, you'd just attach what ever size pipe to equal the opening the manufacturer made in the stove. Some people run adapters to go from 8" down to 6" or 6" up to 8" - with some corresponding loss in performance. Though it seems to be a little more critical to stick with the 'proper' size pipe if your flue is already marginal - say a 13-15' tall flue, exposed on the outside of the house. That will be pretty marginal on draft anyway, so modifying the pipe will only add to the headache. Likewise a 20-30 foot tall flue on the interior of the house will have pretty good draft and will offset the loss of performance in changing pipe size.
