My (newbie) question is: how do you do it? start with air control wide open, establish strong burn, crank the stove temperature in the 600s and then close the air supply completely in once? Something like that?

Every stove is different. With my stove using wood, I have to first establish a good solid coal bed, and get the the newly added wood burning well. Then by simply locking the door shut (I usually burn for a couple minutes with the door slightly cracked after adding wood) the secondaries will kick by themselves. I will then work the air back down in increments until I am burning where I want for the temp desired. The secondaries will stay lit, but not to that extreme with the air cut back. Usually I end up with the "ghost flames" once I get to 3/4 closed.
