sounds deeeeelicious ! I just tried cooking on the stove for the first time. I just boiled some water for mac & cheese. But now I know its possible I will be doing it ALOT more ! Do you guys use a surface temp thermometer of any sort?

I use an infrared thermometer. I turned the stove (electric) on and took temps on different settings (med, med low, etc.) and then shot my stove top before I put my pan on it.
I didn't think anywhere near this much... I just figured the pan is either "hot" or "not hot." 550+ stovetop on the 30 is roughly equal to "high" on my electric cooktop, or "hot."
Looking forward to trying a steak right on the coals, though. Methinks the hickory is the right wood for that...![]()
