For some reason my P61 has started putting out some 50- 75f more heat on a given setting. 5 should be 450f it's giving off 550ish.1 should be 250 it's 285. I don't mind but will it cook the stove? 7 should be 470, this is based on testing and given temps.

Have you cleaned the ESP probe lately? Also, you could unplug the ESP probe from the control board and reconnect.
Since the ESP controls the heat, yes it would be a concern as there is no backup for over firing the stove.
 
What's the the over heat temp limit?
I don't think there is one, as the probe is supposed to be in control. I know there is some control card checking done on power up on the ESP, and you can get a fault. I think the 6 blink means it's got a temperature issue. If you had a new control card I'd say try that.
