While hooking up my new at210 I tucked the washer under the band clamp on my insert. My question is it ok for the sensor cable touch the back of my insert

Yes, it's probably ok. The insert has a convection jacket around it that separates the outside from the firebox within.
 
I think you will be ok as well...mine has been touching the back of mine for 4 years and its just fine..
 
It should be fine in this situation, but if that was a standard stove and the cord was touching the top I'd say no, those cords are "high temp", but not like the probe itself
 
About 8" of my cord lays on top of the stove. No problems in three years.
