I want to insulate the wall thimble of my wood stove (the void where the double wall pipe goes thru the thimble). Is there a safe and reliable spray foam for this area or another solution for filling the void after all is assembled???

I would respect the clearance that the thimble provides to combustibles.

A few threads on this subject if you search, here is one: https://www.hearth.com/talk/threads/possible-to-safely-insulate-space-btwn-chimney-and-shield.73232/

No, don't use foam. How large is the gap? Can you post some pictures of the current set up and one showing the gap?
