I will be converting a Jotul F3CB from top exit to rear exit. What is the proper procedure for the rear knock out. The manual says just tap it with a hammer and it will knock out. Does it come out this easy?

Yep. Just whack it in the center of the knockout with a hammer. Then you might want to file the rough edges.
 
We used to use a hammer and a block of wood, in the center, like Bart says. I think the wood just made us feel better and it was less scary for the homeowners when doing it in front of them.
