Don't cook frequently on the woodstove, but we have electric range and ovens and when the power is out for a few days (happened a few times last year) we were able to heat up some soup and boil water on the Lopi.

The Oslo has an optional cooktop. Is this something easy to switch in or out? Does it make a big enough difference to justify? Does it make a difference with the stovetop steamers?

The Jotul Cooktop for the Oslo is not something you're gonna want to try to change while there a fire in the unit, if that's what you're hinting at. If you get it, install it before the burning season begins & leave it in there. It's bolted in postion from the under side & you either have to work with tools between the top & the baffle or you have to remove the entire top. It comes in unfinished cast iron, so it'll contrast with whatever color you get & it'll rust once whatever oil you've applied to it burns off. A stovetop steamer will actually lead to it's rusting quicker, as water will always get spilled on it. If you're getting one of the porcelain enamel Oslos, & plan to cook in an emergency outage, it'll DEFINITELY hold up better than the pretty finishes.
