Stihl 290 with about 5 cords through it.

Runs fine with the throttle pressed, but reving up and dipping on it's own when I wasn't winding it up. Is this dirt that made it's way in somewhere?

If a saw revs at idle and spins the chain, it usually means that it's running too lean. One of several causes...

Idle mixture screw messed with.
Dirt in the idle jet.
Air leak.
