Maximum surface temps for stove pipe and chimney?

Im using a handheld infared temperature scanner for taking temps. I know the maximum inside flue gas temp is rated for 650*C. What does this equal for the outside surface temp of my double wall stove pipe. Also for my Stainless insulated chimney? I've been getting readings of around 150*C about 8 inches up from the stove flue collar, with a stove top temperature of about 220*C.
