The instructions for my Avalon NG 700 [free standing wood stove looking gas stove] indicate a millivolt thermostat can be used to control the output . It does not indicate the specification of that and I see 24 volt , 750 millivolt and apparently pellet stoves use something different/unspecified . Does anyone know the Avalon specification or should I just obtain one of the few that covers all the possibilities ?

24 VOLTS is not millivolts.
I should have realized that but new to the term "millivolts" . Sorry for the delayed response but an obligation took longer than expected . So I can presume that if an HVAC thermostat description includes "millivolts" it should work ?
