I don't even know the name of the adapter I need. Does it have to be brand specific? Can it be a universal type adapter? Any help on what to call this adapter and what it looks like would be awesome

Well the large metalbestos chimney pipe starts at the ceiling and goes up through the roof and up above the roof a few feet.....so it's a vertical chimney pipe and metalbeatos is I guess acceptable for even a wood stove which has higher temperatures than a pellet stove....but how do I connect the pellet stove pipe to the larger chimney pipe?

Ok we're getting there. The answer is, it all depends.
Do you have the manual for your stove? It should tell you what size pipe you need to start with. If you don't have the manual what is the make and model number of your pellet stove? What is the inside diameter of the chimney pipe that is currently installed? What is the distance between the exit from your stove and the chimney you have to connect to?
There are too many variables in any given setup and it's impossible and irresponsible to make a recommendation on what you need without more information.
What size is the Class A chimney (metalbestos chimney)?
You will need an adaptor for that chimney to the pellet vent size
Class A 6,7, or 8 in to pellet vent 3 or 4 inch, then the first pellet
pipe will need to be an adjustable type for proper vent pipe length
