Hey everyone, Im Mike from Oklahoma. building a new home, and decided on the astria montecito,

Got it all installed, and brick work is about to start, so hanging the mantle is coming, my builder sent me a copy out of the manual that says non combustible mantle only? Seems like there has to be ways around that, as even on the astria website they show it with a wood mantle. what do you guys use for a mantle?

It might not be wood. There are very good non-combustible wood mantels that look like wood.
