I have a quad Castile that I'm putting out on my porch to heat in the shoulder seasons. I don't care for the thermostat option as I'm worried that when the temp dips below 50 the stat will all for heat. I want to make it into a simple on/off system and was wondering if I can just wire a low voltage switch to control the on off function of the stove?
 
Yes, you can put a single pole switch in place of the thermostat.

Should be no issue but I would put the switch in the line so you can operate the stove with the stat when and if you want.

I have two switches connected to my Castile. One operates like a normal switch. Simple on/off operation. The second switch I have in-between the stove and the thermostat. I find it easier to turn on/off the switch versus turning on/off the thermostat.
