Question about creasote forming

I have a quick question that maybe someone could answer. I have been burning my new aqua therm eco one for about 3 weeks now. I have been burning pretty much red oak. The oak has been stored in a shed for about 4 years and is very dry. I have noticed that I am getting alot of gunk mixed in with my ash and when I burn greener wood, it does not seem to form as much. Can someone tell me why my dry wood forms more creasote than the greener? Thanks for the info and thanks for this site.
