Would a aldera t5 be a good choice to replace this vc encore in my 1800's walk in fireplace?

Yes.
Any stove would look good there!

Agreed, that's a beautiful location. What is the reason for changing? Is the Encore connected to an 8" or 6" liner? How tall is the liner?

I have had problems controlling the encore from day one. Seems like the cable for the air control is always getting pinched and will not close down. Also looking for a non cat stove hoping it will be more user friendly for my wife to use. Its connected to 5' double wall pipe and from there about 16' ss insulated liner.

Fair enough. I am thinking the Alderlea T6 may work well there.
6" or 8" liner? How large of a space is the Encore heating?

13×20 stove room, and same size room above via a box winder stair case to the left of the encore. Can't really move heat anywhere else do to small farmhouse doorway to the rest of the house on the opposite side of the room from the stove

If you put a small fan on the floor on the cold side of the farmhouse doorway blowing cold air into the stove room you should be able to move a decent amount of heat.
