Considering that thermometers may not be accurate, I’d shoot for 6-700.
 
So what would you say I should stay at. 700-750?
Typically the STT would be around 600-700º in very cold weather and maybe 500-600º in milder weather. Continually pushing a stove to its upper limits will increase wear on the stove components and possibly the flue system.
