I am getting my pipe installed on my Englander 30 tomorrow. My home is a ranch 1200 square ft ranch. It is 5 feet to the ceiling, 3-4 ft through the roof. How long should my chimney be total? What kind of pipe should I get? What brand? Should I get double wall for all of it or is single wall ok for a portion of it? I heard that the pipe should be a total of around 16ft, but that would make it really hard to clean from the roof. I just want to make sure the installation is done right so I want to have an idea of what to look for and what the correct way is.

Thats a sweet looking set up there!
Any brand of chimney is fine as long as it's Class A. Double wall with solid packed insulation Stainless is best.
You will need to use double wall stove pipe in order to have enough hearth out front. Make sure you get a telescoping section, that way it can be taken down easily without moving the stove.
The chimney height is measured from the stove up. 16' might be possible, but I won't get upset if it ended up being 14', it will look a whole lot better. You can always add another section later if it needs it. Just make sure it is at least 3' out of the roof and 2 feet higher than anything within 10 of the chimney.
 
Agreed. Double wall stove connector pipe on the interior and double-wall class A high temp from where it penetrates the ceiling up to the chimney cap. I like M&G DuraTech, Selkirk Ultra-Temp or ICC Excel for chimney pipe. Whichever you choose remember that you should stick with one brand for the whole flue system.

On the roof you will need to at least honor the 10-3-2 rule. If you can get the total flue to 16ft that would work the best.

I just recently installed an Englander 17-vl in my 720 sq ft ranch house. I used telescoping Duratech DVL from the stove to the ceiling support box, and then three 3 foot sections of Class A Duratech (double wall) from the support box to the chimney cap (5 feet in the attic and 4 feet above the roof). The draft was excellent during my 3 break-in fires.
