I have enough 8" metalbestos type ht pipe for a chimney for my garage. The stove I have has a 6" flue. Should I run the 6" pipe from the stove to where it goes thru the wall or put a 6" to 8" adapter right at the stove?

I would go with the 6" to the wall and the 8" from there out. Not only will it look better but it probably will control the draft a little better.
