I'm installing in an alcove and already have all clearances on all sides. I plan on installing wall protection just for piece of mind. I am going to use durock on durock strips for spacing.I am wondering how far above the stove top would it need to extend ?ceiling height is 89" the stove is 32". would 61" be sufficient or should I go up to ceiling minus air gap? Thanks

You'll hafta double up on the Durarock spacers.
Code calls for a 1" air gap.
I don't have my NFPA-211 code book here, so I can't tell you
if 61" will be code compliant...
I'd run it all the way to the ceiling leaving 1" top & bottom...
It'll probably look better, depending on how you finish it...
