    cooked over the fireplace. The blocks are temporary until I get the base welded, the metal roofing material is used so I can funnel more heat straight up.

    After burning most of the day I raked some coals forward between the blocks, added some small splits of pine,sugar maple, small ironwood and some smaller oak. After that burned down I added some smaller splits of beech.

    About 4:20 I put the steaks on, 4-4-2, four minutes each side then flip over for another two. The steaks came out perfect (from the wife) loved the taste of them.

    Nice. I haven't had a steak in a few months, probably since the summer. I was surprised to see no snow in the picture this week.

    I cooked a pork tenderloin on a cherry plank today with a side of cheddar mashed and beans.

    The boss already is askng what's next, maybe chicken. The grate was given to us by our neighbor Nola (she brought her Kubota up for me to use when we built the fireplace.)

    It's almost time to wake up the neighbor(s), the winds are suppose to come in later so I'll burn less pine today. Maybe we will cook some burgers or hot sausage later, it all depends if the wife has plans already.

    Two recipes that I can recommend for chicken:

    First is the tipsy chicken with bourbon and maple glaze from the Weber cookbook. It is fantastic.

    The second is Pen's white barbecue sauce chicken thigh family recipe that he had up a few months ago in a thread.

    Since this came out so good last time we cooked it we decided it would be our Christmas dinner. ==c

    I'll pick this up tomorrow (my father wants a four pound hunk) it will come in at 14-16 pound prime rib.
