It is a beautiful day up here, T-shirt weather, leaves falling. I used hard maple and oak pieces. I had the thermometer pegged pretty well until the last pizzas went in. Probably close to 800. The crust was really nicely done on the bottom too. I raked out the coals and soaked the bricks with heat before putting them in. Nothing fancy for pizzas today as it was a last minute thought. First cheese out. Black Olive Pepperoni. Well done on top, pepperoni nice and crisp, not greasy. Second cheese out.
