    It is a beautiful day up here, T-shirt weather, leaves falling. I used hard maple and oak pieces. I had the thermometer pegged pretty well until the last pizzas went in. Probably close to 800::F. The crust was really nicely done on the bottom too. I raked out the coals and soaked the bricks with heat before putting them in. Nothing fancy for pizzas today as it was a last minute thought.

    I noticed you are using an air temp thermo. have you ever checked the floor temp with a infra red?? I try to get 800 plus on the infra red on the floor, pegs it on the dome.

    ==c Beautiful fire and food fishingpol. Why do you guys always have to show me delicious looking Pizza? I am trying to eat less you know. :mad: Less. Not more. Less. Pizza is my favorite food. Right up there with Lasagna! And no. Don't show me Lasagna now! (;em Um. Can you cook Lasagna in there too? I imagine you can. :rolleyes:)

    No, my infra red only goes to 500ish. I'm learning to rake the coals out more to soak the bricks for better floor heating. I actually don't like the crust too dark on the bottom. Here is the bottom
    crust shot. Agreed on the dome, insane heat up there.

    Ah, I was more or less putting up firing pics, the pizza ones just fell in there. You were warned. ;) I actually skipped supper and feel quite disgusting still for eating at least a pie and a half myself. I neeed Tums now. I could not help eating those pies right out of the oven. Little extra garlic in the sauce too.
