I currently have a Summers Heat SSHW01. So far its been a good stove but last winter I stupidly broke a baffle board while loading.

The only direct replacement i can find is this one for $84
(broken link removed to https://heatredefined.com/products/ac-w01cfb)

But I found this one for $45 with free shipping

I imagine I can just cut the board down to fit and save $40. Anyone see an issue with this?

No issue.

I trimmed mine to dimension with miter saw. And then in half with hand saw.

Can find them even cheaper on eBay.

Not sure of the composition, but it looks like a good job for an angle grinder, and the proper wheel.

That is for the 13-NC which has a more shallow firebox. Will there be enough material to properly match the current baffle?

My stove uses 2 smaller baffles. Just one is broken. The cheaper one I linked is larger than the 1 baffle I need

I see, I thought Englander was selling a set for $84, but that is just for one.
