All the Woodstocks are cats or hybrids, and don't have convective jackets and blowers. You'll be able to heat more air faster, then move it around, with a jacketed stove with blower.
Is there a hallway in the center of the house, running parallel to the stairs, or just the doors we see? Are those doors standard width, like 30 or 36", or are they wider?
Just the doors, which are about 30”, unfortunately not much in the house is standard, lol.

Is the block-plate strictly an efficiency/heat gain or is needed in regards to safety too?
The block-off plate is just to keep more heat in the house, as opposed to heating masonry. With your interior chimney there's less that is lost outside, as with my exterior masonry, but you still want to keep that heat in the room, not radiating from the masonry to other areas in the house where it's not needed.

So looking at the Osburn 950 as well, looks like the dimensions would work well, and possibly have a connection to get one for under $1500. Any thoughts or concerns with it over drafting with such a tall chimney?

Internally it is the same as the Drolet Spark II but with a vermiculite baffle instead of a c-cast one. Externally it has side shielding and more styled legs. The trimmings don't warrant spending an additional $700 if one is on a tight budget imo. The savings might be better spent on the blower.
