Install of the Jotul 160 continues - we will be installing vpf and the Jotul manual states it has to have a non combustable installed over the vpf and minimum size is 18x18. Would any thickness of stainless steel work for this? I see nothing about insulation factor. Probably going with a teardrop shape to fill in the corner.

You are going to be good with a metal corner pad. I just had a pellet stove installed and they did that. It will be up to your installer ie the one filling the paper work out for your insurance company. According to your manual if it was real wood you wouldn't need anything.
Mine is as thin as they could make it and painted mild steel. It should be listed though.
