Is there a way for me to clean this chimney from inside?

Well, I wouldn't say this is the easiest method but it can be done. Not sure I'll be able to put it back together though ;lol
The metal bits on either side that hold up the baffle also have to be removed, which has to be done while holding the baffle up off of them with one hand and the baffle is not light and the opening of the stove is not huge, so it's a little bit painful. It looks like the have tab at the rear that you lift them off of and then swing them to the inside of the stove so the can slide out of the holder at the front.
The blanket has to be manipulated a bit so it doesn't get caught between the baffle and the firebricks. The baffle seems to be exactly the same width as the gap between the firebricks.
How does one remove the top? Older Jotuls had the top bolted for shipping but one could remove those bolts and the top lifted off.

Yes the top can be removed and is gasketed. Two bolts on the inside center that are accessible from the flue collar. There is also that center cook plate that can be removed as well.
 
The way to do this, if you can, is definitely to unbolt the top and lift the baffle out through the top of the stove.
If, like me, you can't do that, or you just enjoy pain and suffering, here are a few more tips/pics of the process now that I've actually done all of it.
- Get something to pad the stove opening so it's not digging into your arms while you're trying to lift the baffle. I didn't, and it's only just occurred to me that that would have been a good idea.
- I think you might be able to get away with only removing the baffle support/firebrick retainer on one side, though you may have issues with the insulating blanket catching on it when trying to reinstall.
- The baffle sits on a lip/platform at the back of the stove that has the secondary air tube. There's a gasket on this platform that was mildly mangled in the process. I shoved it back in as best I could and am hoping for the best this season, but next time I'll have to find a different solution. Maybe a super tiny (like 1/8") rope gasket of some sort?
- The baffle support has a slot at the back that fits over a metal tab at the back of the stove

I don’t know if this would work for you come next year. My last house had 10/12 roof. I bolted pieces to a single section of aluminum lader to hook it over the peak. Slid it up then flipped it over. It allowed me to get up to the chimney. Shingles must make it easier once up there but maybe some low profile footholds could also be bolted to the ladder.
