Measuring Temps on SS Pipe

My rear vent stove has single wall stainless running horizontal. Any recommendations on how to measure temps (magnetic thermometer won’t stick) on this? Should I use the IR gun and just use the magnetic gauge for the stove top?

If the magnetic one says "Stove Top Thermometer", then yes.

I use my IR for the flue too.

The magnetic ones usually have a hole in the center for a screw

Your IR gun won't give an accurate reading on shiny or clean matte stainless steel due to the difference in IR emissivity of the surface. You would either need to do some sort of 'correction' by taking 'actual' readings (thermocouple probe, magnetic thermometer, etc) and comparing to IR gun readings. Or you could spray paint a section of the stainless matte black which should bring the emissivity in line with the general range the IR gun is expecting

Just set the magnetic meter on top. You can also use safety wire around the pipe.
