I am restoring a US Army Cannon heater for use and wondered if I should use stainless steel bolts or regular steel and also should I use high heat paint or stove polish?
 
I always use stainless bolts in cast iron stoves. Easier to get them back out without busting them and having to drill. Also put some copper based anti-seize compound from the auto parts store on the threads when you install them.
