Slow burning

So the question for those of you that have burned with EPA stoves for a long time is, in my Hearthstone Hearitage using dry wood (I operated dry kilns for years) can I burn low and slow ie small fires small flames.
 
Low and slow burning in these stoves will likely result in a smokey burn and blackened glass. It would be better to burn small hot fire and let them go out. The stone will soak up the heat and slowly release it into the room.
