Does anybody make a stove or fireplace intended to be hooked to a 5" diameter chimney?

Jotul does with the 602, and provides the adapter from 120 to 150mm.

The hole in the top of the Jotul F100 is 5" too and they supply an adapter up to six inch.

Does performance suffer by using the adapter rather than sticking with a 5" chimney?

my cawley lemay is 5" to but i have it hooked to a 6" liner

No. The increase is within acceptable parameters.

Wondering why your buddy who designed the Englander 17-VL went with 6" rather than 5". Surely 5" is more appropriate for that size stove?

Because 6" pipe is all over the place. 5", not so much.
