I am trying to find a replacement for a "Hot Button" stovepipe thermometer that I bought five years ago. It works with a 9 volt battery and beeps when the stove pipe reaches 500 F. Impossible to find in Quebec.

These are not available anywhere I currently know of. Since modern stoves burn much cleaner, creosote and chimney fires have been greatly reduced...therefore these are less popular.
Only possible place is a catalog that goes to fireplace retailers called "Sandhill".
Maybe your local dealer has this catalog .
